We talk to Audrey Zubko, founder and CEO of Biosota Organics, from humble backyard hives to now producing some of the world’s highest quality Australian Certified Organic Manuka honey.
Question. Share some insights about your brand story with the audience.
Biosota has always been a family story. I grew up around beekeeping, shaped by three generations of knowledge transferred from Europe in the 1950s to Australia in the 1990s. What started with a few backyard bees has grown to produce a premium, medicinal Australian honey sourced from some of Australia’s most remote and untapped regions.
For us, it was never just honey production. It is about managing and bringing to people the natural healing properties of Manuka honey. Each pot is developed through a patient experimental process, harvested in limited batches, minimally processed, and matured naturally for 12-24 months to allow the key bioactive compounds to fully develop. Known for its antibacterial, anti-inflammatory and antioxidant properties, high-quality Manuka honey is increasingly recognized for supporting gut health, immune function, skin repair and overall well-being.
Our Australian Certified Organic standard ensures that our bees forage freely across native Manuka within a pristine 5km radius, away from farms, roads or industry, so what you get is pure, traceable and uncompromising.
Going from a few backyard hives to producing certified organic Manuka honey at this level and delivering it to customers around the world is something we’re really proud of.
Question. If a consumer sees this brand for the first time, what will be the key message you want to communicate to them.
If you are discovering our Australian family brand for the first time, the most important thing to understand is the difference between plain honey and Manuka honey and what makes Manuka honey so special. Manuka honey is naturally healing, and in Australia its potency is measured by MGO, which reflects the level of its key bioactive compounds and guides how it can best be used both topically and through consumption.
Higher MGO Manuka honey is often chosen for targeted support, while mid-range options, such as MGO 1200, are suitable for everyday use. This is where many people see the most value and make it a consistent routine to support gut health, immune function and overall well-being over time.
What makes it easy to stay consistent is its versatility. It can be taken directly from the spoon and added to hot drinks or used to finish meals. We recommend adding it at the end or to low heat recipes to preserve its bioavailability. From there, it’s about finding simple ways to incorporate it into your daily routine, because with Manuka honey, consistency is where the real benefits are felt.
Question. What has been one of the highlights of the brand’s journey so far?
One of the highlights of our journey is achieving Certified Australian Organic status while producing some of the highest grade medicinal Manuka honey in the world. This is a rare balance. Achieving these levels of MGO is demanding in itself, but doing so under strict organic standards—where pole placement, feeding conditions, and processing are tightly controlled—adds another layer of complexity.
For us, this represents more than an important milestone. This proves that you don’t have to compromise between purity and strength. It reflects the discipline, patience and respect for the natural process that sits behind each pot.

Question. Is there anything else you want our audience to know about your work with this brand?
