Lentil soup, lemon and mint
Inspired by Nigel Slater, it’s both heartening and cathartic at the same time, building anticipation as it bubbles. I’ve made it a few different ways, but this one works well with a bit of bacon, over ham, or ham if you prefer. In my family we now often cook it after Christmas using turkey stock. It represents a nourishing end to the holidays and a return to simpler pleasures. In general, lentils can be cooked for a shorter or longer time depending on your texture preference.
