Zucchini Air Fries with Yogurt Dip – Vegetarian Recipe – Nutritionist


Directions are for 4 servings. Please modify as necessary.

Zucchini potatoes

  • Preheat an air fryer to 400°F (200°C).

  • Cut the zucchini in half and then cut into wedges. Place them in a large bowl, drizzle with avocado oil and toss well.

  • Sprinkle Parmesan cheese, paprika powder, onion powder, salt and pepper on top and gently toss until all the zucchini fries are covered with the seasoning.

  • Place in the air fryer and fry for 12-14 minutes until golden, throw it halfway.

  • Yogurt drink

  • In a small bowl, combine the Greek yogurt, chopped scallions, parsley, and onion powder. Season with salt and pepper.

  • Cover and chill until ready to serve.


  • Serve zucchini fries with dipping sauce on the side.

  • Tips

    Change the spices! Try garlic powder, a little cayenne, or Italian seasoning.

    Prefer a vegan version? Use nutritional yeast instead of Parmesan cheese and substitute sugar-free marinara sauce for yogurt dressing.

    Oven method

    Preheat the oven to 425°F (220°C). Continue with the recipe through Step 3, then bake in the oven for 20 minutes.
